In a stand mixer, combine the sugar, shortening, salt, heavy cream, egg, flour, and boiling water. In a small bowl, sprinkle the yeast packet over 1/4 cup warm water and stir to dissolve. Remove from bag and enjoy immediately while they’re still warm! Once the oil is drained off the beignets but they’re still warm, put them into a gallon size ziploc bag filled with powdered sugar and gently shake them to coat them completely. Once the beignets are cooked, remove them with a tong and place them on a plate lined with paper towels so the excess oil can drain. You can cook 4-5 beignets at a time, just make sure you don’t overcrowd them. Place the beignets in the oil and allow them to cook about 2-3 minutes or until both sides are golden brown. In a deep pan on the stove or an electric skillet, heat 3 inches of vegetable oil over medium-high heat or to 350°. Once the beignets are risen, you need to get the oil ready. Leave the beignets in a warm area for 1 to 1 1/2 hours until the beignets have doubled in size. Place the beignets on a cookie sheet lined with parchment paper and cover with a towel. If you don’t have a Mickey cookie cutter you can do 3 inch squares instead. Cut out the beignets using a Mickey shaped cookie cutter. Next place the dough on a clean, floured surface and roll out to 1/4 inch thickness. Once the dough is smooth, allow it to rest for 30 minutes. Then add the yeast mixture and with a dough hook attachment, mix the dough until it is just combined and smooth. One thing about the Disney Parks recipe that I changed is the amount of yeast in the dough.
